About five years ago, my son began to get sick to his stomach several times per day- for no apparent reason. At first we thought it was a virus- but he never got better.
That started an ordeal that was every parents worst nightmare.
Our family doctor suggested he might have stomach cancer. Then came barium x-rays, endoscopies, and biopsies. Every doctor said the same thing:
“We don’t know what’s wrong.”
All the while he was losing weight and getting frightfully thin. In a three month period, he missed 30 days of school.
Then an acquaintance recommended a doctor that had helped her daughter with similar symptoms. He asked all the questions we’d already answered a hundred times- and ordered a blood test.
Two days later we had the answer.
Celiac Disease- an intolerance to the gluten that occurs in wheat.
We asked how this could be? He’d eaten wheat his entire life. No one knew the answer, all they knew was he had to go on a totally wheat free diet.
I told him I’d do it with him in sympathy. [I didn't think it was fair to tell a little kid you can't eat this, but sit there and watch me eat it.]
We read every label in the house- and threw out all the wheat products. Then we had to read every label at the grocery store. [Wheat is in products you'd never imagine.]
He almost immediately started feeling better.
About a month later, I never felt better as well- and I was losing weight.
I honestly don’t know what it is about wheat. Maybe it’s the pesticides, or how it’s often stored in silos for long periods of time. Maybe it’s the processing.
I have no idea. But I do know this: I will never go back to eating wheat.
I used to have all kinds of stomach issues- gone.
I used to eat whole wheat when I tried to lose weight because I was told it was healthy.
I always failed.
Now get this:
Since going off wheat [and exercising] I oftentimes have to make myself eat even when I don’t feel hungry- or I’ll start losing weight when I don’t want to.
I know what you’re thinking- what about all the tasty stuff that’s made from wheat?
Well, at first I gave up the pancakes, waffles, brownies, and muffins- and yes- it wasn’t easy- and I realize not everyone wants to do that.
So what do you do if you want to lose weight- or just eat healthier- but don’t want to go totally without foods like cheesecake, cookies, cupcakes, muffins- or my favorite- chocolate brownies?
Well, the good news is, you can make a healthy version of almost anything, once you know how. I used to pick up the occasional recipe here and there, then I came across a great resource:
I rarely recommend cookbooks, because most so-called “healthy” recipe books are filled with unhealthy products like artificial sweeteners or highly processed ingredients- which spike your blood sugar and make fat loss ten times harder than it has to be.
Even if you don’t have Celiac Disease, go off wheat and see what happens. You won’t believe how much better you’ll . If this sounds like a good idea, start with recipes from the Healing Gourmet that get the New Body New Life seal of approval.
